Ingredients

For the Dal:

1 cup Pigeon Peas (Toor Dal)

as needed Water

1 tsp Turmeric Powder

1 tsp Salt

For the Tempering & Masala:

2 tbsp Clarified Butter (Ghee)

1 tsp Mustard Seeds

1 tsp Cumin Seeds

1 tsp Fenugreek Seeds

2 tbsp Peanuts

1 piece Dry Red Chilli

1 tsp Asafoetida Powder (Hing)

2 piece Green Chilli (slit)

1 small Ginger (chopped)

few Curry Leaves

1 large Tomato (chopped)

1 tbsp Tamarind Puree

to taste Salt

1 tsp Red Chilli Powder

2 tsp Coriander Powder

2 tbsp Jaggery

1 cup Water

For Garnishing:

handful Fresh Coriander

few Lemon Juice

Instructions

Step 1Prepare the Dal

Rinse the toor dal thoroughly 2–3 times.

Soak the dal in enough water for 30 minutes to ensure it cooks to a creamy consistency.

Transfer the soaked dal to a pressure cooker, add water, turmeric powder, and salt. Pressure cook for 5–6 whistles on medium flame.

Once the pressure has released, whisk the cooked dal until it is smooth and creamy. Set it aside.

Step 2Prepare the Tempering

Heat ghee (or oil) in a wide pan or kadhai.

Add mustard seeds, cumin seeds, fenugreek seeds, peanuts, and broken dry red chilies. Sauté until the mustard seeds begin to crackle.

Stir in the asafoetida (hing), slit green chilies, chopped ginger, and curry leaves. Roast these ingredients briefly.

Step 3Build the Flavor Base

Add the chopped tomato to the pan and cook for 2–3 minutes until the tomatoes turn soft and mushy.

Incorporate the tamarind puree, salt, red chili powder, and coriander powder, mixing everything well.

Add the powdered jaggery and stir until it melts completely into the mixture.

Step 4Final Simmer

Gently pour the cooked, whisked dal into the pan with the tempering base.

Add about 1 cup of water to reach your desired consistency and adjust the seasoning (salt and jaggery) if needed.

Cover the pan and let the dal simmer on low flame for 5 minutes so the flavors meld together.

Step 5Garnish and Serve

Turn off the heat and finish by stirring in freshly chopped coriander leaves and a squeeze of fresh lemon juice.
