Ingredients

Main Ingredients:

Ivy Gourd (Dondakaya) 250 g

2 tbsp Oil

1 tsp Black Gram (Urad Dal)

1 tsp Mustard Seeds

1 tsp Cumin Seeds

2 nos. Red Chilli

1 tsp Asafoetida Powder (Hing)

few Curry Leaves

1 tsp Salt

1 tsp Turmeric Powder

2 tsp Red Chilli Powder

1 tsp Coriander Powder

1 cup Peanuts

For the Masala Powder:

1 cup Grated coconut

5 nos. Red Chilli

5 cloves Garlic

2 tbsp Roasted Bengal Gram (Chana Dal)

Instructions

Step 1Prepare the Masala Powder

In a pan, lightly roast the grated coconut and dried red chilies.

Once roasted, allow the mixture to cool down completely.

Add the cooled coconut and chilies to a mixer jar, along with the garlic cloves and roasted chana dal.

Grind the ingredients into a nice, coarse powder.

Step 2Tempering and Frying the Ivy Gourd

Heat oil in a wide pan over medium heat.

Add the urad dal, mustard seeds, and cumin seeds. Once the mustard seeds begin to crackle, add the red chilies and asafoetida powder.

Toss in the fresh curry leaves, followed by the thinly sliced ivy gourd pieces.

Stir well and fry the ivy gourd until it softens and turns a beautiful golden-brown color.

Once the vegetable is about a quarter cooked, add salt to taste and continue roasting until crispy.

Step 3Seasoning and Finishing

Add the turmeric powder, chili powder, and coriander powder to the pan, mixing thoroughly to coat the vegetables.

Stir in the freshly prepared masala powder and sauté everything together for about five minutes so the flavors meld.

In a separate small pan, roast the peanuts with a little oil, salt, and chili powder until they are crunchy.

Add these roasted peanuts to the ivy gourd fry for an extra crunch.

Step 4Serving

Turn off the stove and serve the hot Dondakaya Vepudu as a side dish with sambar, rasam, or mor khuzhambu.
