6 medium Potato (boiled, peeled & cubes)

1 bunch Fenugreek Leaves (Methi)

3 tbsp Oil

1 tsp Cumin Seeds

1 large Onion (roughly chopped)

1 large Garlic

2 small Tomato (roughly chopped)

3 piece Green Chilli (slit)

1 tsp Salt

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

1 tsp Cumin Powder

1 tsp Coriander Powder

1 tsp Garam masala Powder (Hot Spices)

1 tsp Dry Mango Powder

1 tsp Red Chilli Flakes

1 cup Water

Peel the potatoes, chop them into medium-sized pieces, and keep them in a bowl of water to prevent discoloration. Pick the fresh methi leaves from their stems, wash them thoroughly to remove any dirt, and set them aside.

Heat oil in a wide kadai (pan) over medium heat and add cumin seeds. Once they sizzle, add the chopped onions and sauté for two to three minutes.

Add the potato pieces to the pan followed by the pounded or finely chopped garlic cloves. Sauté for a few minutes.

Add the chopped tomatoes and slit green chilies. After cooking for about two minutes, stir in the salt, turmeric powder, chili powder, cumin powder, and coriander powder.

Pour in half a cup of water, cover the kadai with a lid, and cook for about 10 minutes until the potatoes are tender.

Add the cleaned methi leaves to the pan and mix gently. Cook for another 10 minutes on medium flame, being careful not to break the softened potatoes.

Once the leaves are cooked, stir in the garam masala powder, amchur powder, and red chili flakes. Mix everything well, let the raw smell dissipate, and turn off the heat.
