Ingredients

Main Vegetables:

2 cups Green Beans (finely chopped)

2 cups Carrot (finely chopped)

Coconut & Spice Blend (to be ground):

1 cup Dry Shredded Coconut

1 tbsp Ginger (chopped)

1 large Green Chilli

2 leaf Curry Leaves

For Tempering & Cooking:

1 tbsp Coconut Oil

1 tsp Mustard Seeds

1 tsp Black Gram (Urad Dal)

pinch Turmeric Powder

as needed Water

Red Chili : Added during tempering

Instructions

Finely chop the green beans and carrots.

Place the chopped carrots and beans in a pan.

Add turmeric powder, salt, and just enough water to cook the vegetables without letting them submerge completely.

Cover with a lid and cook until tender. Halfway through, remove the lid to allow the remaining water to evaporate, ensuring the vegetables retain their texture.

In a mixer or food processor, combine the shredded coconut, ginger, green chili, and curry leaves.

Pulse until the mixture is coarsely ground (avoid adding water).

In a separate pan, heat the coconut oil.

Add the split urad dal and mustard seeds. Once the mustard seeds start to splutter, add the red chili.

Transfer the cooked carrot and beans mixture into the pan with the tempered spices.

Mix well, then fold in the ground coconut mixture.
