Ingredients

Paneer: 1 block (cubed, soaked in warm water)

Cumin Seeds: 1 heaped teaspoon

Onion: 1 medium (sliced)

Garlic: 2 cloves (sliced)

Green Peppers: 1 (sliced)

Tomato: 1 small (thinly sliced)

Fresh Ginger: 1-inch piece (sliced into slivers)

Turmeric: 1 pinch

Kashmiri Chili Powder: 1 teaspoon

Coriander Powder: 1 heaped teaspoon

Lemon Juice: 1 squeeze

Fresh Coriander: 1 tablespoon (chopped)

Oil: For frying (as needed)

Water: A splash (as needed to prevent burning)

Instructions

1

Cube the paneer and soak it in a bowl of warm water to ensure a soft, spongy texture.

2

Heat a heavy-bottomed pan over medium heat and add a splash of oil. Add the cumin seeds and allow them to sizzle.

3

Add the sliced onion to the pan and sauté until softened. Follow this by adding the sliced garlic, stirring to combine the flavors.

4

Lower the heat to medium-low to prevent the spices from burning. Stir in the turmeric, Kashmiri chili powder, and coriander powder, mixing well to coat the aromatics.

5

Add the sliced green peppers to the pan. If the spices begin to stick or brown too quickly, add a small splash of water to help cook the peppers while maintaining the flavor base.

6

Add the pre-soaked paneer cubes to the pan. Gently stir so the paneer absorbs the spices. Cook for about 2 to 3 minutes; do not overcook to keep the paneer soft.

7

Stir in the thinly sliced tomato and fresh ginger slivers. Finish with a squeeze of fresh lemon juice and chopped coriander.

8

Garnish with extra fresh ginger and coriander. Serve hot alongside warm layered flatbreads.
