Ingredients

2 Onion

2 Tomato

2 tbsp Clarified Butter (Ghee)

to taste Salt

1 tsp Turmeric Powder

1 tsp Red Chilli Powder

pinch Black Pepper Powder

pinch Garam masala Powder (Hot Spices)

Chopped handful Fresh Coriander

1 Bottle Gourd

Instructions

Chop the onions and tomatoes. Peel the bottle gourd, remove seeds if necessary, and dice it into medium-sized pieces.

Set a pressure cooker over high flame and add the ghee.

Once the ghee is hot, add the onions, tomatoes, and diced bottle gourd to the cooker.

Add salt, turmeric powder, and red chilli powder. Stir everything well.

Secure the cooker lid and cook on high flame for one whistle.

Lower the flame to medium and continue cooking for 3-4 more whistles.

Reduce the flame to low and cook for another 8-10 minutes.

Switch off the flame and allow the pressure to release naturally.

Open the cooker and turn the flame to high. Stir and mash the vegetables as they cook until the excess water evaporates and the ghee begins to separate.

Once the consistency resembles a bharta, adjust salt if needed. Stir in the black pepper powder, garam masala, and fresh coriander before serving.
