Ingredients

For the Dal:

1 cup Pigeon Peas (Toor Dal)

2 cups Water

1 tsp Turmeric Powder

1 tsp Salt

For the Curry Base:

3 piece Drumstick

3 tbsp Oil

1 tsp Mustard Seeds

3 cloves Garlic (chopped)

2 pinch Asafoetida Powder (Hing)

1 no. Green Chilli (chopped)

1 tsp Red Chilli Powder

1 tsp Coriander Powder

2 nos. Tomato (chopped)

1 tsp Salt

2 cups Water

1 tbsp Jaggery

For the Tadka (Tempering):

1 tbsp Clarified Butter (Ghee)

1 tsp Cumin Seeds

2 nos. Dry Red Chilli

1 tsp Red Chilli Powder

For garnishing Coriander Leaves (chopped)

Instructions

Step 1Prepare the Dal

Rinse 1 cup of Toor Dal thoroughly in water.

Add the rinsed dal to a pressure cooker along with 2 cups of water, 1/2 tsp turmeric powder, and 1 tsp salt.

Pressure cook for three whistles until the dal is soft and mushy.

Step 2Prepare the Drumsticks

Cut the ends off the drumsticks and split them into 3-inch pieces.

Peel off the hard outer ridges of the drumsticks.

Step 3Sauté the Aromatics and Vegetables

Heat 3 tbsp of oil in a pan.

Add 1/2 tsp mustard seeds. Once they splutter, add 3 chopped garlic cloves, 2 pinches of asafoetida, and 1 chopped green chilli. Sauté for a minute.

Stir in 1/2 tsp red chilli powder and 1 tsp coriander powder; sauté briefly.

Add 2 chopped tomatoes and cook for a few minutes until they soften.

Step 4Cook the Drumsticks

Add the prepared drumsticks to the pan along with 1 tsp salt and 2 cups of water.

Cover the lid and cook for 10 to 12 minutes until the drumsticks are tender but not mushy.

Step 5Combine and Finish

Add the cooked dal to the pan with the drumsticks and mix well.

Cover and let the mixture cook together for an additional 5 minutes.

Stir in 1 tbsp jaggery powder and remove from heat.

Step 6Temper (Tadka) and Serve

In a separate small heated pan, add 1 tbsp ghee.

Add 1 tsp cumin seeds and 2 dried red chillies. Once they crackle, stir in 1/2 tsp red chilli powder.

Pour this tadka over the dal and garnish with fresh chopped coriander leaves before serving.
