1 tsp Coriander Powder
to taste Red Chilli Powder
2 pinch Turmeric Powder

2 tbsp Green Capsicum (Finely Chopped)
1 small Tomato (finely chopped)
1 Green Chilli (finely chopped)
small Onion (finely chopped)
small Grated Carrot
4 tbsp Bread Crumbs

Crack four eggs into a mixing bowl and whisk them thoroughly.

Add half a teaspoon of coriander powder, red chili powder (to taste), two pinches of turmeric, and salt (to taste). Whisk the spices into the eggs until well combined.

Stir in finely chopped capsicum, a small finely chopped tomato, one finely chopped green chili, a little chopped onion, and some grated carrot. Add 4–5 tablespoons of breadcrumbs (or powdered bread) to the mixture and stir everything together until the consistency is correct.

Place an appe pan (Paniyaram pan) on the stove over a low flame. Add a small amount of cooking oil to each mold and let it heat up slightly.

Carefully pour the prepared egg mixture into the greased molds. Cover the pan and let it cook on low heat for about 1 minute.

Once the bottoms are set and firm, flip each piece over to cook the other side. Cover the pan again and cook for another minute.
