1 cup Coriander Leaves (chopped)

3 cups Mint Leaves

1 tsp Cumin Seeds

1 tsp Black Salt

1 tsp Pepper Powder

Pani Puri Masala 1 tsp

to taste Salt

3 piece Lemon Juice

3 cups Cold Water

For the Filling:

2 piece Boiled Potatoes

1 cup Sprouted Moong (boiled)

Soaked Boondi 1/2 cup

as needed Black Salt

as needed Cumin Seeds

Additional Assembly:

Puffed Puri As needed

Step 1Prepare the Tangy Flavored Water

In a blender, combine roughly chopped green chillies, coriander leaves, mint leaves, cumin seed powder, black salt, pepper powder, pani puri masala, salt, and lemon juice.

Grind these ingredients into a smooth paste.

Transfer the paste to a bowl and whisk in three cups of ice-cold water.

Strain the mixture and refrigerate it for at least two to three hours to allow the flavors to meld. Add four to five ice cubes just before serving.

Step 2Prepare the Filling

In a mixing bowl, combine the chopped boiled potatoes, soaked moong (you can boil the moong for five to six minutes if preferred), and soaked boondi.
