Ingredients

Vegetable Base:

500 g Potato (chopped)

100 g Green Peas

500 g Tomato (chopped)

to taste Salt

as needed Water

For the Masala:

200 g Butter

200 g Onion (finely chopped)

1 tsp Cumin Seeds

4 tbsp Red Chilli Powder

1 tbsp Garlic Paste

1 medium Green Capsicum (chopped)

1 tsp Turmeric Powder

1 tbsp Garam masala Powder (Hot Spices)

to taste Salt

For Assembly & Serving:

Ladi pav

Butter

Chopped onions

Chopped coriander

Lemon wedges

Step 1Prepare the Vegetable Base

In a pan, add the roughly cut potatoes, green peas, chopped tomatoes, and water.

Add salt to taste.

Cover and cook for 15 to 20 minutes until all the vegetables are soft and fully cooked.

Once done, remove from heat and mash the mixture thoroughly using a potato masher. You may add a little extra water to ensure the consistency is soft and mushy.

Step 2Prepare the Masala Base

Heat a separate pan to a moderate temperature and add butter.

Add the finely chopped onions and sauté until softened.

Stir in the cumin seeds, garlic paste, and chilli powder, mixing well to incorporate the flavors.

Add the chopped capsicum, turmeric powder, and garam masala to the pan and mix.

Step 3Combine and Finish the Bhaji

Add the mashed vegetable pulp into the pan with the masala.
