Ingredients

For the Egg Bhurji:

4 nos. Egg

1 tbsp Oil

1 tsp Cumin Seeds

2 medium Onion (chopped)

3 nos. Green Chilli (chopped)

2 medium Tomato (chopped)

to taste Salt

1 tsp Turmeric Powder

1 tbsp Coriander Powder

2 tsp Red Chilli Powder

1 tsp Garam masala Powder (Hot Spices)

2 tbsp Fresh Coriander

For the Mint & Curd Dip:

1 cup Curd

2 tbsp Mint Leaves (chopped)

to taste Salt

to taste Black Pepper

For Assembly:

Pav 6 nos.

as needed Grated Cheese

as needed Fried Onions (Birista)

as needed Butter

Instructions

Step 1Prepare the Egg Bhurji

In a bowl, break the eggs and whisk them well.

Heat oil in a pan over medium heat and add the jeera. Sauté for about a minute.

Add the chopped onions and green chillies, cooking until the onions become translucent.

Stir in the chopped tomatoes, salt, turmeric powder, coriander powder, red chilli powder, and garam masala. Cook the mixture until the tomatoes soften and become mushy.

Pour the whisked eggs into the pan. Cook while stirring continuously over medium flame.

Once the eggs are cooked, fold in the freshly chopped coriander leaves, mix well, and set the bhurji aside.

Step 2Prepare the Mint & Curd Dip

In a small bowl, combine the hung curd, chopped fresh mint leaves, and salt and black pepper to taste. Mix until smooth and set aside for later use.

Step 3Assembly and Toasting

Slice the pav into two halves. Spread a generous layer of the mint and curd dip onto both sides of the pav.

Place a spoonful of the prepared egg bhurji onto each slice, pressing down gently to ensure the filling stays intact.

Sprinkle grated processed cheese over the top of the egg mixture.

To toast, heat butter in a pan over medium heat. Place the stuffed pav slices in the pan, cooking until the bottom layer is crispy.

Cover the pan to allow the cheese to melt fully. Alternatively, you can bake the prepared toasts at 200°C for 5-6 minutes.

Before serving, garnish with a final drizzle of the mint and curd dip and a sprinkle of crispy fried onions. Serve hot.
