Instructions

Step 1Prepare the Dry Ingredients

1

In a large bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon. Set this mixture aside.

Step 2Prepare the Muffin Batter

1

In a large mixing bowl, beat the eggs on high speed with an electric mixer until they become pale, light, and fluffy.

2

Continue beating the eggs while slowly adding the granulated sugar. Keep beating for about three minutes.

3

Add the vanilla extract and mix, then slowly pour in the heavy cream while continuing to mix.

4

Gradually sift the dry ingredient mixture into the wet batter, adding about one-third at a time and mixing between additions.

5

Once incorporated, fold in the melted butter.

Step 3Prepare the Apples

1

Peel and chop your apples into small cubes. Place them in a bowl and toss with lemon juice.

2

Gently fold the cubed apples into the prepared muffin batter using a spatula.

Step 4Prepare and Bake

1

Line your muffin tin with cupcake liners and fill them with the batter using a large cookie scoop.

2

To make the streusel, combine flour, cinnamon, a pinch of salt, brown sugar, and cold cubed butter in a small bowl. Mash the mixture with a fork until it has a dry, crumbly texture.

3

Sprinkle the streusel topping over the muffins.

4

Bake in a preheated oven at 350°F for approximately 35 minutes.
