Ingredients

1 cups All-Purpose Flour (Maida)

3 tsp Baking Powder

1 cup Unsalted Butter

1 cup Granulated Sugar

1 cup Peanut Butter

pinch Salt

1 large Egg

1 tsp Vanilla Extract

1 cup Light Brown Sugar

Instructions

1

Preheat your oven to 350°F and line your baking sheets with parchment paper.

2

In a medium bowl, whisk together the all-purpose flour and baking powder. Set this mixture aside.

3

In a large mixing bowl or stand mixer, cream the softened, room-temperature unsalted butter with both the granulated sugar and packed light brown sugar until well combined.

4

Add the peanut butter to the butter-sugar mixture. Mix until fully incorporated.

5

If your peanut butter is salted, add an extra pinch of salt if desired.

6

Add the egg and vanilla extract to the mixture and beat until combined.

7

Be sure to scrape down the sides of the bowl to ensure a smooth, homogeneous texture.

8

Add the flour mixture to the wet ingredients. Mix on low speed until just combined—be careful not to overmix—and finish by folding gently with a spatula.

9

Scoop the dough into 2-tablespoon sized portions (about 40g each).

10

Roll them into balls and place them onto the prepared baking sheets.

11

Use a fork to press a cross-hatch pattern into the top of each cookie ball to help them bake evenly.

12

Bake in the preheated oven for approximately 10 minutes per batch. Allow the cookies to cool before serving.
