A pinch Food Coloring

2 tbsp Curd

as needed Water

as needed Oil

Instructions

Step 1Prepare the Sugar Syrup

1

In a saucepan, combine 2 cups of sugar and 1 cup of water.

2

Once the sugar has dissolved, add 2 cardamom pods (crushed), juice of 1/2 lemon, and a pinch of saffron (optional).

3

Boil the mixture for about 5 minutes on medium-low flame. Once done, set it aside.

Step 2Prepare the Jalebi Batter

1

In a mixing bowl, combine 1 cup of maida (all-purpose flour), a pinch of baking powder, and a small pinch of food coloring.

2

Add 2 tablespoons of curd (yogurt) and mix well.

3

Gradually add water while mixing until you reach a smooth, free-flowing, creamy consistency.

Step 3Piping the Batter

1

Transfer the prepared batter into a piping bag and secure the top tightly.

Step 4Frying

1

Heat oil in a wide pan for deep frying. Keep the flame at medium-low.

2

Squeeze the batter into the hot oil in a circular motion to create the jalebi shapes.

3

Fry for 1–2 minutes on each side until golden and crispy.

Step 5Soaking

1

Remove the fried jalebis directly from the oil and dip them into the warm sugar syrup.

2

Ensure both sides are coated, let them absorb the syrup for a moment, and then remove them. Your hot, crispy jalebis are ready to serve!
