A small handful Coriander Leaves (chopped)
A few Cucumber (sliced)

1
Cut your tomatoes into nice wedges.
2
Beat three eggs in a bowl.
3
Ensure your rice is from the previous day; it should be nice and dry, not gluggy
4
Get your wok or pan very hot until it is smoking slightly.
5
Add oil, then the garlic (chopped roughly) and onion. Sauté until the onions begin to soften.
6
Add the tomato wedges and cook until they soften and break down slightly.

8
Add the day-old rice to the pan.
9
Season with fish sauce, light soy sauce, and dark soy sauce. The dark soy gives the dish its signature color and a touch of sweetness
10
Sprinkle in a little sugar to help with caramelization and a smoky flavor.
11
Push the rice mixture to one side of the wok, add a little more oil to the empty space, and crack in the eggs.
12
Once the eggs begin to set, break them up into chunks and toss everything together.
13
Finish by seasoning with a decent pinch of white pepper and stir in coriander and spring onion.
14
Serve with a side of prik nam pla (a mixture of spicy chilies and fish sauce, with an optional squeeze of lime or lemon).
15
Add fresh cucumber slices to the plate to help cool the palate while eating
