2 medium Potato (boiled, and peeled)

100 g Cheddar Cheese

Fresh Herbs (2-3 sprigs of fresh oregano and 2-3 sprigs of fresh thyme)

1 Egg

For dusting Refined Flour

For coating Bread Crumbs

to taste Salt

to taste Black Peppercorns

For deep frying Oil

Combine the grated cheddar cheese in a bowl with crushed black peppercorns. Pluck the leaves from the fresh oregano and thyme, chop them roughly, and mix them into the cheese. Divide this mixture into small, equal portions and shape each into a small ball.

In a separate bowl, mix the mashed potatoes with salt and crushed black peppercorns until well combined.

Take a portion of the potato mixture and shape it into a ball. Flatten it in your palm and make a cavity in the center. Place a cheese ball inside, then bring the edges of the potato together to seal the cheese completely inside.

Dust your worktop with refined flour. Roll the stuffed potato balls on the flour and shape them into cylinders.

Prepare a bowl with the whisked egg and a separate area with bread crumbs. Dip each potato cylinder into the egg, then roll it in the bread crumbs until thoroughly coated. Press the edges gently to maintain the cylinder shape.

For best results, place the prepared croquettes in the refrigerator for about one hour.

Heat sufficient oil in a deep kadai. Carefully slide in the croquettes and deep fry them until they turn a uniform, crispy golden brown.
