Ingredients

For the Pasta:

1 cups Macaroni Pasta

as needed Water

1 tsp Salt

For the Vegetables:

1 tbsp Butter

1 tsp Oil

1 medium Onion (finely chopped)

5 cloves Garlic (chopped)

1 no. Green Capsicum

1 no. Red Capsicum

1 no. Yellow Capsicum

1 tsp Salt

1 tsp Pepper

1 tsp Red Chilli Flakes

1 tsp of Italian seasoning/Mixed herbs

For the White Sauce:

1 tbsp Butter

2 tbsp All-Purpose Flour (Maida)

1 cups Milk

1 tsp Salt

1 tsp Pepper

1 tsp Red Chilli Flakes

½ teaspoon of Mixed herbs

2 piece Cheese Slice

1-2 tbsp of Extra milk (optional, for adjusting consistency)

Instructions

Step 1Prepare the Macaroni

Bring a saucepan of water to a boil.

Add the macaroni shells and a half teaspoon of salt.

Cook until the pasta is done, then strain and set aside.

Step 2Sauté the Vegetables

Heat one tablespoon of butter and a teaspoon of oil in a pan.

Sauté the finely chopped onion and garlic for about a minute until the onion turns transparent.

Add the diced capsicum (and any other preferred vegetables like sweet corn or carrots).

Season with salt, pepper, red chili flakes, and Italian mixed herbs.

Toss in the cooked macaroni, mix well, and set aside.

Step 3Make the White Sauce

In a clean saucepan, melt one and a half tablespoons of butter.

Stir in two tablespoons of all-purpose flour (maida) and cook briefly in the butter.

Gradually add one and a half cups of milk while whisking constantly to prevent lumps.

Cook on medium-low flame, adding salt, pepper, chili flakes, and mixed herbs.

Step 4Combine and Serve
