Ingredients

300 g Penne Pasta

4 small Red Chilli

1 clove Garlic (chopped)

For frying Olive oil

2 cups Water

to taste Salt

For garnishing Processed Cheese

Instructions

Bring a large pot of water to a boil. Add a generous amount of salt.

Once boiling, add the penne pasta and cook according to the package instructions.

While the water is heating, finely chop the fresh chilies (you can leave the stalks on if you prefer).

Slice one large garlic clove into thick pieces—slicing them thicker makes it easier to remove them later if you dislike the texture.

Heat a generous splash of olive oil in a pan.

Add the sliced garlic and chopped chilies to the oil. Let them cook gently until fragrant and the garlic is lightly golden.

Carefully add the chopped tomatoes to the pan with the garlic and chili. Stir well and let the sauce simmer for a few minutes.

Add a large handful of fresh basil leaves to the sauce.

To improve the consistency and help it coat the pasta, stir in a spoonful or two of the starchy water from the boiling pasta pot.
