Ingredients

For the Pasta:

2 cups Macaroni Pasta

1 tsp Salt

1 tsp Oil

1 cup of Reserved Pasta Stock

For the Tomato Sauce:

4 medium Tomato

2 tbsp Oil

1 tbsp Garlic (finely chopped)

1 medium Onion (finely chopped)

1 piece Green Capsicum (Finely Chopped)

to taste Salt

1 tsp Sugar

1 tsp Black Pepper Powder

1/2 tsp of Mixed Herbs Seasoning

1 tsp Red Chilli Flakes

1 tsp Kashmiri Red Chilli Powder

2 tbsp Tomato Ketchup

1 Butter

Instructions

Step 1Boil the Pasta

Bring a large pot of water to a boil, adding salt and a little oil.

Cook the macaroni for about 6-7 minutes or until al dente.

Strain the pasta, rinse it with water to stop the cooking process, and reserve one cup of the pasta water for later.

Step 2Prepare the Tomato Puree

Make small slits in 4-5 tomatoes and boil them in a separate saucepan for 4-5 minutes until the skin begins to peel.

Remove the skins and blend the tomatoes until you have a smooth puree.

Step 3Sauté Aromatics

In a large wok or pan, heat 2 tablespoons of oil.

Add finely chopped garlic and cook for about 30 seconds.

Then, add a finely chopped onion and sauté until translucent.

Step 4Add Vegetables & Puree

Optionally, add finely chopped capsicum and cook for a moment.

Pour in the prepared tomato puree and cook on high heat for 2 minutes, then cover and simmer on low-to-medium heat for 4-5 minutes until the sauce reduces and oil begins to separate.

Step 5Season the Sauce

Stir in sugar, black pepper powder, mixed herbs, red chili flakes, and Kashmiri red chili powder.

Add store-bought tomato ketchup (optional) to balance the flavors.

Step 6Finish the Dish

Pour in the reserved pasta water to adjust the consistency of the sauce and cook for another 2 minutes.

Finally, add the boiled pasta and a knob of butter.

Toss everything together until the pasta is thoroughly coated with the sauce. Serve hot and garnish with extra herbs if desired.
