2 cup of shredded carrots

1 cup Walnuts

1 cup All-Purpose Flour (Maida)

1 tsp Baking Powder

1 tsp Baking Soda

3 tsp Salt

1 tsp Cinnamon

1 cup Granulated Sugar

1 cup Brown Sugar

3 cup Vegetable Oil

1 tsp Vanilla Extract

2 large Egg

1/4 tsp of Nutmeg

226 g Cream Cheese (Softened)

1 cup Unsalted Butter

6 cups of powder sugar

1/4 tsp of granted ginger

Preheat your oven to 350°F and line a muffin tin with paper liners.

Peel and freshly shred the carrots by hand to ensure maximum moisture.

Roughly chop the walnuts (or pecans) and set them aside

In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, cinnamon, ground ginger, and nutmeg until well combined

In a separate large bowl, combine the granulated sugar, light brown sugar, vegetable oil, vanilla extract, and room temperature eggs.

Whisk the mixture until it is smooth and well incorporated.

Pour the wet ingredients into the dry ingredients (or vice versa).
