Ingredients

3 medium Banana

1 cup All-Purpose Flour (Maida)

1 tsp Baking Powder

1 tsp Baking Soda

1 tsp Salt

1 tsp Cinnamon

5 tbsp Unsalted Butter

1 tsp Vanilla Extract

2 medium Egg

3 cup Granulated Sugar

few Walnuts

1/4 cup of full fat paln yogurt

1/2 tsp of allspice

1 tsp Green Cardamoms

If your bananas are not already very ripe and mushy, place them on a baking sheet and bake at 350°F for about 10 minutes until the skins are blackened. Remove from the oven and let them cool.

In a bowl, sift together the all-purpose flour, baking soda, baking powder, salt, cinnamon, allspice, and cardamom. Whisk the mixture well to ensure the spices are evenly distributed.

Make an incision down the middle of the cooled bananas and scoop them into a large bowl. Mash them until smooth.

Into the bowl with the mashed bananas, add the melted unsalted butter, vanilla extract, full-fat plain yogurt, and room-temperature eggs. Whisk these ingredients together until well combined. Stir in the granulated sugar.

Gently fold or whisk the sifted dry ingredients into the wet mixture until just combined. Be careful not to overmix.

Line a muffin tin with paper liners. Fill each muffin cup with the batter

Sprinkle some crushed walnuts or a bit of turbinado sugar on top of the muffins for added crunch.

Bake in the oven at 375°F for 5 minutes. Then, reduce the temperature to 350°F and bake for an additional 15 minutes, or until the centers are springy to the touch
