For garnishing Pumpkin Seeds
Step 1— Prepare the Oven and Pan
1
Preheat your oven to 400°F.
2
Line a 12-cup standard muffin tin (or a 6-cup jumbo muffin tin) with paper liners.
Step 2— Mix Dry Ingredients
1
In a large mixing bowl, combine the whole wheat flour, baking powder, salt, cinnamon, nutmeg, and cloves.
2
Add the chopped walnuts to the dry mixture and stir until everything is well combined.
Step 3— Prepare Wet Ingredients
1
In a separate bowl, whisk together the eggs, olive oil (or neutral oil), maple syrup, milk, and vanilla extract.
2
Stir the finely grated carrots into the wet mixture until fully incorporated.
Step 4— Combine and Portion
1
Pour the wet ingredients into the bowl with the dry ingredients.
2
Mix the components together using a spatula just until combined; be careful not to overmix, as you want to avoid white streaks while keeping the batter light.
3
Portion the batter evenly into your prepared muffin tin.
4
Sprinkle the tops with pumpkin seeds for extra texture and a nice presentation.
Step 5— Bake
1
Place the muffins in the preheated 400°F oven and bake for 10 minutes.
2
After 10 minutes, reduce the oven temperature to 350°F and continue baking for another 10–18 minutes, depending on the size of your muffins.
3
To check for doneness, insert a cake tester or toothpick into the center of a muffin; it should come out clean.
Step 6— Serve
1
Remove the muffins from the oven and allow them to cool slightly before serving.
