Ingredients

1 cup Ginger (chopped)

3 large Potato

1 tbsp Olive oil

1 cube Veggie Stock

1 tsp Black Pepper Powder

1 tsp Fresh Thyme

Cayenne pepper (optional) (1/3 tsp)

1 cup Fresh Parsley (chopped)

as needed Water

to taste Salt

Garlic( 6 to 8 cloves, roughly chopped )

Instructions

Heat one tablespoon of olive oil in a medium pot over medium heat.

Add the roughly chopped garlic and ginger to the pot. Sauté for a few minutes until fragrant.

Increase the heat and add water (fill about one-third of the pot). Add half of the peeled potatoes and continue to add water until it reaches about one inch above the potato line.

Add one low-sodium vegetable stock cube. Cover the pot and boil for about 20 minutes, or until the potatoes are tender.

Once the potatoes are soft, use an immersion blender to process the soup until it is nice, smooth, and creamy. Be careful as the liquid is hot.

Stir in the salt (to taste), white or black pepper, dried thyme, and optional cayenne pepper to boost metabolism.

Add the rest of the peeled potatoes to the pot. Add another two cups of water to adjust the soup volume.

Cover and let the soup simmer for another 15–20 minutes, or until the added potatoes are tender.

Stir in the fresh chopped parsley. Cover the pot and let it sit for about five minutes before serving.
