Ingredients

1 tbsp Butter

1 tsp Ginger (finely chopped)

1 tsp Garlic (finely chopped)

1 medium Onion (finely chopped)

2 Spring Onion Whites

1 cup Cauliflower

1 cup Cabbage (chopped)

1 cup Carrot (finely chopped)

1 cup Green Capsicum (Finely Chopped)

to taste Salt

1 tsp Black Pepper Powder

2 cups Water

1 cup Sweet Corn

1 cup Spring Onion (chopped)

Schezwan Chutney (1 tbsp)

1 tsp Green Chilli Sauce

1 tsp White Vinegar

2 tbsp Tomato Ketchup

1 tbsp Cornflour (Cornstarch)

Noodles ( as needed)

1 tsp Red Chilli Flakes

Instructions

Heat 1 tablespoon of butter (or oil) in a pan. Add 1 teaspoon of finely chopped ginger and 1 tablespoon of finely chopped garlic. Sauté until they turn slightly pink.

Add 1 medium finely chopped onion and the white part of chopped spring onions. Cook until they become translucent.

Stir in 1/2 cup each of finely chopped cauliflower, cabbage, and carrot, along with 1/4 cup of finely chopped capsicum. Sauté for a few minutes, keeping the vegetables crunchy.

Add 1 teaspoon of salt (or to taste) and 1/2 teaspoon of black pepper powder. Mix well.

Pour in 2-3 cups of water and bring the mixture to a boil.

Add 1/2 cup of pre-boiled sweet corn and 1/4 cup of chopped green spring onions.

Stir in 1 tablespoon of Schezwan chutney, 1 teaspoon of green chilli sauce, 1 tablespoon of dark soy sauce, 1 teaspoon of white vinegar, and 2 tablespoons of tomato ketchup. Mix everything thoroughly.

Whisk 1 tablespoon of corn flour with a little water to create a lump-free paste. Add this to the soup and mix until it reaches your desired consistency.

Add the noodles directly into the soup. Cover the pan and cook for 1-2 minutes until the noodles are soft.

Stir in 1/2 teaspoon of red chilli flakes (optional, based on spice preference).

Pour the soup into a bowl, garnish with extra green spring onions, and serve hot.
