Ingredients

2 tsp Oil

to taste Green Garlic (finely chopped)

1 piece Ginger (finely chopped)

Spring Onion - whites and greens (finely chopped)

1 cup Carrot (finely chopped)

1 cup Cabbage (shredded)

1 cup Green Beans (finely chopped)

1 cup Green Capsicum (Finely Chopped)

to taste Salt

to taste Pepper

1 l Water

1 cup Coriander Leaves (chopped)

Heat the oil in a deep pot. Add the finely chopped garlic and ginger, and sauté for about 2 minutes on low flame until fragrant, being careful not to brown them.

Add the chopped spring onion whites and greens, followed by the finely chopped carrots, beans, capsicum, and shredded cabbage. Sauté for a few minutes until they are slightly tender.

Add the salt and pepper to the pot and mix well to combine.

Pour in 1 litre of water. Cover the pot with a lid and let the soup boil on a medium flame for at least 15 minutes to develop the flavors.

Once the vegetables are cooked, turn the heat to low. Squeeze in the juice of the lemons and add the chopped coriander leaves (including the stems for extra flavor).

Taste the soup and add more salt or pepper if needed, then turn off the heat.
