Ingredients

For the Kachori Shell:

1 cup All-Purpose Flour (Maida)

2 tbsp Semolina(Rava)

1 tsp Baking Soda

to taste Salt

as needed Water

For the Filling & Garnish:

1 cup Potato (boiled)

1 cup Sprouted Moong (boiled)

1 tbsp Tamarind Chutney

1 tsp Coriander & Mint Chutney

1 cup Curd (whipped)

to taste Red Chilli Powder

to taste Black Salt

to taste Roasted Cumin Powder

as needed Salt

For garnishing Pomegranate kernels

For garnishing Fresh Coriander

Instructions

Step 1Prepare the Dough

Combine refined flour, semolina, and baking soda in a bowl.

Season with salt, then gradually add water to knead a dough that is neither too soft nor too stiff.

Cover the dough with a damp cloth and let it rest to allow the semolina to bloom.

Step 2Shape and Fry the Kachoris

After resting, knead the dough briefly once more.

Divide into portions and roll them out into circles approximately 1.5 mm thick.

Deep-fry in hot oil. Use a slotted spoon to gently push the kachori down; it will puff up once it rises to the surface.

Flip and cook on a low flame until it turns crisp and sturdy.

Step 3Assemble the Chaat

Create an opening by gently punching a hole in the top center of the crisp kachori shell.

Stuff it with boiled potatoes and boiled sprouted moong.
