Instructions

1

Melt butter in a cast-iron skillet over medium heat. Add onions and season with salt. Cook for 20-25 minutes until deep golden and caramelized. Stir in Worcestershire sauce and fresh thyme, then set aside.

2

Layer the surface evenly with thinly sliced roast beef.

3

Roll out the puff pastry dough on a floured surface.

4

Top with a layer of provolone cheese and the caramelized onion mixture.

5

Roll the pastry tightly into a log, finishing with the seam side down.

6

Use a serrated knife to cut the log into 3/4-inch thick slices.

7

Arrange slices on the baking sheet. Brush the tops and sides with an egg wash (beaten egg with a splash of water).

8

Bake for 17-20 minutes until golden brown and the cheese is bubbly.

9

While baking, prepare the jus: melt butter in a small pan, add garlic, then pour in beef broth. Add Worcestershire, Dijon, and thyme. Simmer for 2 minutes.

10

Serve hot with the dipping sauce.
