Ingredients

2-3 cups - Cooked Rice & Moong Dal

1 cup - Assorted Boiled Vegetables

1 tbsp Clarified Butter (Ghee)

1 tsp Cumin Seeds

1 inch Cinnamon Stick

2 nos. Cloves

1 nos. Dry Red Chilli

1 nos. Onion (chopped)

1 nos. Tomato (chopped)

1 tsp Garam masala Powder (Hot Spices)

1 tsp Red Chilli Powder

1 tsp Black Salt

to taste Salt

as needed Water

For garnishing Coriander Leaves (chopped)

For Serving:

Instructions

Heat 1½ tbsp of ghee in a pan over medium heat. Once hot, add 1 tsp of cumin seeds, ½ inch cinnamon stick, 2-3 cloves, and 1 broken dried red chilli.

Add 1 chopped onion and sauté until nicely cooked, but not browned. Stir in some chopped coriander leaves.

Add 1 chopped tomato to the pan. Immediately add 1 tsp garam masala, 1 tsp red chilli powder, ½ tsp black salt, and regular salt to taste. Cook until the tomatoes are soft.

Add 2-3 cups of pressure-cooked rice and moong dal (which was cooked with 2 cups of water and ¼ tsp turmeric).

Mix in 1 cup of assorted boiled vegetables. Pour in additional water as required to reach your desired consistency and let it simmer for 5 minutes.

Garnish with fresh coriander leaves and serve hot with roasted papads and mango pickle.
