Ingredients

2 cup Basmati Rice

4 cups Water

1 nos. Bay Leaf

4 nos. Cloves

1 inch Cinnamon Stick

3 nos. Green Cardamoms

1 tsp Cumin Seeds

4 nos. Black Peppercorns

200 g Paneer

1 cup Mixed Vegetables

1 nos. Big Onions

2 nos. Green Chilli

1 tbsp Onion Ginger Garlic Paste

1 cup Curd (whipped)

2 tbsp Oil

1 tsp Garam masala Powder (Hot Spices)

1 tbsp Biryani Masala

1 tsp Coriander Powder

1 tsp Red Chilli Powder

1 tsp Black Pepper Powder

1 tsp Salt

1 tsp Sugar

handful Fresh Coriander

2 medium Fried Onions (Birista)

250 g Fresh Spinach (pureed)

1 tbsp Clarified Butter (Ghee)

1 tsp Lemon Juice

Instructions

In a pot, combine rinsed basmati rice, 4 cups water, and whole spices (bay leaf, cloves, cinnamon, cardamom, cumin seeds, black peppercorns). Cook until 90% done and set aside.

Blend washed/blanched spinach leaves with 2-3 tbsp water into a smooth paste.

hallow fry 1/2 sliced onion with 1 tsp sugar in hot oil until golden and crisp. Set aside for garnish.

Heat oil/ghee in a pan, add cumin seeds, bay leaf, green chillies, and sliced onions. Sauté until translucent, then add ginger-garlic paste, diced potatoes, and mixed vegetables.

Stir in garam masala, biryani masala, coriander powder, red chilli powder, black pepper powder, and salt. Add spinach puree and whisked curd, cooking for 3-4 minutes.

Fold in paneer cubes gently and simmer for 2 minutes until thick and creamy.

In a deep dish, spread half the cooked rice, top with the palak paneer masala, add the remaining rice, and finish with crispy fried onions and chopped coriander leaves.

Steam for 5-10 minutes on low heat and serve hot with cool raita.
