Ingredients

Kimchi : 1 cup , chopped into a small piece ( plus some kimchi juice)

3 cup Rice

1 tsp Vegetable Oil

1 cup Water

Hot pepper paste 2 tsp

2 tsp Sesame Oil

Green onion (for garnish)

Instructions

Chop one cup of sour, fermented kimchi into small pieces. Keep the kimchi juice aside to use later.

Heat about one teaspoon of vegetable oil in a heavy-bottomed pan, skillet, or wok over medium heat.

Add the chopped kimchi to the pan and stir-fry for about one minute

Add approximately three cups of freshly made rice to the pan and stir it together with the kimchi.

Add a portion of the reserved kimchi juice, followed by 1/4 cup of water (to prevent the bottom from burning), two teaspoons of hot pepper paste, and two teaspoons of sesame oil.

Remove the pan from the heat. Top with freshly chopped green onions and a little extra sesame oil if desired before serving.
