Ingredients

1 cup Basmati Rice

2 tbsp Sesame Oil

20 cloves Garlic (chopped)

For garnishing Spring Onion - whites and greens (finely chopped)

1 medium Onion (chopped)

2 tbsp Vinegar

1 tsp Red Chilli Flakes

to taste Black Pepper

200 g Mushrooms

few Ginger

to taste Salt

2 tbsp Soy Sauce

3 no. Of dried chilli

1 tbsp Cornflour (Cornstarch)

1 cup Water

Instructions

Heat two tablespoons of sesame oil in a pan over medium heat.

Add the finely chopped garlic and fry until golden brown. Once browned, remove half of the fried garlic and set it aside for later use.

To the remaining garlic in the pan, add the sliced spring onion whites and chopped onion. Sauté briefly.

Stir in two tablespoons of vinegar.

Add the pre-cooked basmati rice and mix well.

Season with chili flakes, crushed pepper, and salt (if needed).

Garnish with spring onion greens, toss the mixture together for about five minutes, and remove from heat.

Heat a small amount of oil in a pan.

Add ginger juliennes, thinly sliced garlic, onion wedges, and the mushrooms. Sauté until the mushrooms are cooked.

Season with salt, pepper, two tablespoons of vinegar, and two tablespoons of soy sauce. Mix thoroughly.

Add dried chilies and the spring onion whites.

In a separate bowl, mix one tablespoon of corn flour with a half-cup of water. Pour this mixture into the pan.

Add extra water if needed to reach your desired consistency, bring the gravy to a boil, then remove from heat.
