Ingredients

1 cup Long Grain Basmati Rice

200 Green Peas

1 tbsp Clarified Butter (Ghee)

2 tsp Oil

2 large Onion (thinly sliced)

Green chilli 4

1 piece Ginger

4 clove Garlic

1 tsp Salt

1 cups Coconut Milk

Whole spices : bay leaf, clove , cinnamon, cardamom,1/4 tsp of cumin Seeds

A few Mint Leaves

Instructions

Wash one cup of long-grain basmati rice a couple of times with water

Soak the rice in water for about 30 minutes.

Create a coarse paste by pulsing two green chillies, a piece of ginger, and four cloves of garlic in a mixer.

Heat one and a half tablespoons of ghee and two teaspoons of oil in a pressure cooker.

Add whole spices: bay leaf, cinnamon, clove, cardamom, and a quarter teaspoon of cumin seeds.

Add two thinly sliced large onions and two slit green chillies. Sauté until the onions turn transparent.

Stir in the prepared ginger-garlic-green chili paste.

Add approximately 200 grams of fresh peas and one teaspoon of salt. Cook the peas for five minutes.

Drain the soaked basmati rice and add it to the cooker. Gently mix the rice with the peas for two minutes.

Pour in one and a quarter cups of diluted coconut milk (you can use plain water as a substitute).

Add a few optional mint leaves for a pleasant, mild flavor.

Close the pressure cooker, place the weight on, and cook for one whistle on medium flame.

Once done, let the pressure release, and your Matar Pulao is ready to serve with your favorite side dish.
