8 ounces of Rice noodles

2 tsp Oil

10 ounces of Frozen stir-fry vegetables

1 cup Frozen Edamame

Spicy Peanut Sauce:

1 cup Peanut Butter

1 cup Soy Sauce

2 tbsp Rice Vinegar

2 tbsp Chilli Garlic Sauce

1 tbsp Sriracha

2 tsp Sesame Oil

¼ cup of Water or vegetable broth

Garnish:

1 cup Fresh Cilantro (roughly chopped)

1 bunch Green Onion (sliced)

to taste Toasted Sesame Seeds

Boil the rice noodles according to the package instructions.

Check for doneness around the five-minute mark, then drain and set aside.

In a mixing bowl, whisk together the creamy peanut butter, reduced-sodium soy sauce (or tamari), rice vinegar, toasted sesame oil, chili garlic sauce, and sriracha.

Add the water or vegetable broth to reach your desired consistency; it will thicken slightly as it sits.

Heat the neutral oil in a large pan over medium-high to high heat.

Add the frozen stir-fry vegetables and frozen edamame.
