One bag of brussels sprouts

One leek for leek

Two stock cubes of vegetable stock

1 l Water

Blue cheese for garnish

Clean and chop the leek into small pieces, ensuring any dirt is removed. Trim the bottoms off the Brussels sprouts and cut them into quarters.

Melt butter in a saucepan over medium heat. Add the chopped leeks and sauté gently until they are softened and translucent, being careful not to burn or crisp them.

Add the quartered Brussels sprouts to the saucepan with the leeks. Sauté for a few minutes to soften slightly.

Add the stock cubes to the pot, then pour in enough boiling water to cover the vegetables. Bring the mixture to a gentle simmer and let it cook for about 15 minutes, or until the Brussels sprouts are tender when pierced with a fork. Season with salt and pepper to taste
