Ingredients

Vegetables:

250 g Cauliflower

10 piece Beans

1 medium Carrot

1 cup Green Peas

3 medium Onion (sliced)

A few Green Chilli (slit)

Rice & Aromatics:

500 g Long Grain Basmati Rice

Whole masalas (for boiling water): Ginger, garlic, cumin, green cardamom, clove, and bay leaf (in a muslin bundle)

1 cup Saffron Milk

2 tsp Kewra Water

A few Mint Leaves (chopped)

A few Coriander Leaves (chopped)

Masala Base:

Whole spices: Cinnamon, Shahira, clove, mace, black cardamom, black pepper, and green cardamom

2 tbsp Ginger-Garlic Paste

Dry masalas: Turmeric powder, kashmiri chili powder, coriander powder, and 1 teaspoon Biryani Masala

1 cup Curd

2 tbsp Fenugreek Seeds

Almonds and cashews: Optional, for crunch

to taste Fresh Cream

Pantry Essentials:

Oil: For frying vegetables and onions

to taste Sea Salt

Clarified Butter (Ghee): For rice water and layering

Instructions

Step 1Prepare Vegetables

Fry cauliflower, beans, and carrots in hot oil until lightly browned. Remove and set aside.

Fry the blanched green peas until they crack open.

Thinly slice onions and fry them until golden brown, then set aside.

Step 2Rice Preparation

Soak long-grain Basmati rice for 30 minutes.

Create a 'potli' (bundle) of ginger, garlic, cumin, green cardamom, cloves, and bay leaf using muslin cloth.

Add this bundle to a pot of boiling water. Once the water is infused, add the drained rice, plenty of salt (the water should taste like sea water), and a little ghee.

Cook the rice until it is 70% done, then drain.

Step 3Prepare the Masala Base

In the Biryani pot, saute whole spices (cinnamon, shahira, clove, mace, black cardamom, black pepper, and green cardamom).

Add ginger-garlic paste and fry until the raw smell disappears.

Stir in turmeric, kashmiri chili powder, coriander powder, and Biryani Masala.

Pour in fresh thick curd and simmer, stirring continuously.

Mix in the fried vegetables, slit green chilies, crushed kasuri methi, optional nuts (almonds/cashews), and fresh cream.

Step 4Dum Process (Layering and Cooking)

Add the 70% cooked rice over the vegetable masala.

Layer with fried onions, chopped mint, coriander, slit green chilies, saffron milk, and kewra water.

Add a final drizzle of ghee.

Seal the pot with aluminium foil and a tight lid to trap the steam.

Place the pot on a preheated flat iron tawa on medium flame for 25–30 minutes.

Allow it to rest for 20 minutes before opening and serving gently.
