If the raw mango is particularly juicy, you do not need to add water. If the mango is dry, use a very small amount of water to help the grinding process.

Ingredients

300 g Basmati Rice

625 ml Water

2 tsp Salt

1 cup Raw Mango

30 g Fresh greated coconut

3 piece Green Chilli

3 tsp Mustard Seeds

2 tsp Bengal Gram (Chana Dal)

1 tsp Black Gram (Urad Dal)

2 tbsp Peanuts

4 piece Dry Red Chilli

10 leaf Curry Leaves

1 tsp Yellow Asafetida

1 tsp Turmeric Powder

4 tbsp Vegetable Oil

Instructions

Step 1Preparing the Rice

Wash the rice in two to three changes of water. Soak the rice in water for approximately 30 minutes, then drain.

Cook the rice with the specified amount of water and salt until fluffy.

Spread the cooked rice onto a large platter or tray and allow it to cool completely before mixing.

Step 2Preparing the Spice Paste

In a blender or food processor, combine the peeled and shredded raw mango, fresh grated coconut, green chilies, and mustard seeds.

Grind the mixture into a fine paste.

Step 3Preparing the Tempering (Tadka) and Cooking

Heat the vegetable oil in a small saucepan or seasoning pot over medium heat.

Lower the heat slightly and add the Bengal gram dal (chana dal) and urad dal.

Stir for a few seconds, then add the raw peanuts.

Once the lentils and peanuts begin to change color, add the mustard seeds and wait for them to pop.

Reduce the heat and add the broken dry red chilies, curry leaves, and yellow asafetida (hing).

Stir in the ground mango spice paste, turmeric powder, and salt.Cook the mixture for about 3 to 4 minutes until the oil begins to separate from the spice paste.

Step 4Final Assembly

Gently fold the cooked, flavorful mango spice mixture into the cooled rice until evenly combined.
