3 tsp Oil
4 tbsp Bengal Gram (Chana Dal)
1 tsp Mustard Seeds
4 piece Kashmiri Red Chilli
4 piece Dry Red Chilli
1 tsp Cumin Seeds
1 tbsp Coriander Seeds
1 tsp Fenugreek Seeds
1 & 1/2 tsp of Black Sesame Seeds
1 tsp Asafoetida
1 tbsp Black Gram (Urad Dal)
1 cup Peanuts
10 leaf Curry Leaves
3 tbsp of Tamarind Pulp
1 cup Water
1 tbsp Jaggery
to taste Salt
1 cup Boiled Rice
Step 1— Prepare the Homemade Masala Powder

Heat one teaspoon of oil in a pan.

Add the chana dal and roast for a few seconds.

Incorporate the mustard seeds, Kashmiri red chillies, and spicy dry red chillies.

Stir in the cumin seeds, coriander seeds, and fenugreek seeds.

Finally, add the black sesame seeds and asafoetida. Toast all ingredients until the chana dal turns golden brown and fragrant.

Remove from the heat, allow the mixture to cool completely, and grind it into a smooth powder.
Step 2— Prepare the Rice Base

Heat two teaspoons of oil in a pan over low heat.

Add the chana dal and urad dal; fry them until they begin to change color.

Add the peanuts and continue to fry on low heat to ensure they are toasted and not raw.

Stir in two spicy red chillies and a handful of fresh curry leaves.

Pour in the tamarind pulp and water. Let the mixture simmer.

Add two tablespoons of your prepared homemade masala powder and the jaggery. Cook until the jaggery has fully melted and the mixture has thickened.

Season with salt to taste, ensuring there is enough to flavor the rice as well.

Add the boiled rice to the pan and toss everything together until the rice is evenly coated with the tamarind-masala mixture.
