Instructions

Step 1Prepare the Fruit Soak

1

In a bowl, combine the orange juice, water, and lemon juice.

2

Add the tutti frutti, raisins, dried apricots, dried cranberries, and prunes. Let the mixture soak to soften the fruits.

Step 2Prepare Dry Ingredients

1

In a separate bowl, sift together the maida (all-purpose flour), cinnamon, ginger, clove, baking powder, and baking soda.

2

Add the orange zest and mix well. Set this mixture aside.

Step 3Prepare Wet Ingredients

In a large mixing bowl, whisk together the vegetable oil and brown sugar until well combined.

2

Add the yogurt and vanilla extract, whisking until the batter is smooth and elastic.

Step 4Combine Batter

1

Gradually add the dry flour mixture to the wet ingredients, folding gently until just combined. Be careful not to overmix.

2

Add the soaked fruit mixture (along with the liquid) and the nuts (almonds, walnuts, and cashews) to the batter. Fold them in until evenly distributed.

Step 5Bake

1

Pour the batter into a prepared cake tin.

2

Bake the cake in a preheated oven at 160°C for 50–55 minutes.

3

Once baked, allow the cake to cool completely in the pan before slicing and serving.
