Ingredients

For the Cake Batter:

2 cups All-Purpose Flour (Maida)

2 tsp Baking Powder

1 tsp Baking Soda

1 cup Vegetable Oil

1 cup Castor Sugar

1 cup Milk

1 cup Mango Puree

1 tsp Vanilla Extract

For the Cardamom Cream Cheese Frosting:

1 cup Cream Cheese (Softened)

1 tsp Vanilla Extract

1 tsp Cardamom Powder

1 cup Butter (Softened)

1 cups Powdered Sugar

Decoration:

as needed Mango (chopped)

Instructions

Step 1Prepare the Cake Batter

In a bowl, sift together the maida (all-purpose flour), baking powder, and baking soda. Set aside.

In a large mixing bowl, whisk together the sunflower oil and caster sugar for a few minutes until the sugar starts to dissolve.

Blend fresh mangoes in a blender until smooth to create mango purée. Measure 1 cup and add it to the sugar and oil mixture.

Stir in the vanilla extract and milk.

Gradually sift the dry ingredient mixture into the wet ingredients and fold gently until you have a smooth, well-combined batter.

Step 2Bake the Cake

Preheat your oven to 180°C.

Pour the batter into an 8-inch cake pan lined with parchment paper.

Bake for 40 to 45 minutes.

Repeat the process if you wish to make a second layer for the cake.

Step 3Prepare the Frosting

In a mixing bowl, beat together the softened cream cheese, softened butter, vanilla extract, and cardamom powder until the mixture is light and fluffy.

Sift in the icing sugar and continue to beat with an electric mixer until the frosting is smooth.

Step 4Assembly
