Ingredients

Chopped Garlic : A generous amount (to create the signature burnt flavor).

1 bowl Boiled Noodles

handful Spring Onion (chopped)

Sesame Oil : Sufficient for frying the garlic and tossing the noodles

to taste Soy Sauce

to taste Black Pepper (roughly crushed)

to taste Salt

For greasing Vinegar

Instructions

1

Heat a non-stick pan and add sesame oil (or regular cooking oil).

2

Add the chopped garlic, reduce the heat, and spread the garlic evenly.

3

As soon as it turns golden brown, quickly strain the oil and set the fried garlic aside.

4

Note that the garlic will darken slightly more due to residual heat.

5

Using a wok or deep pan, reheat the oil used for the garlic.

6

Keep the heat on high, as high-heat cooking is essential for this style of dish.

7

Add the chopped spring onions to the hot oil. Sauté them briefly; they should remain nice and crunchy rather than fully browned.

8

Add the boiled noodles to the pan with the spring onions.

9

Add the crushed black peppercorns, a pinch of salt (be careful, as soy sauce is salty), soy sauce, and a splash of vinegar.

10

Add half of the prepared fried garlic to the noodles and toss everything together over high heat until well combined.

11

Turn off the heat. Transfer the noodles to a serving bowl and garnish with the remaining fried garlic and fresh spring onions before serving.
