Ingredients

For Boiling:

2 cups Penne Pasta

to taste Salt

1 tsp Oil

For Vegetables:

2 tsp Butter

1 tsp Garlic (finely chopped)

1 piece Onion (chopped)

1 small Carrot (chopped)

1 piece Green Capsicum (chopped)

handful Corn (boiled)

to taste Salt

1 tsp Black Pepper Powder

For White Sauce:

4 tbsp Butter

4 tbsp All-Purpose Flour (Maida)

2 cups Milk

to taste Salt

1 tsp Black Pepper Powder

1 tsp Red Chilli Flakes

1/2 teaspoon of Mixed Herb Seasoning

4 tbsp Grated Cheese

Instructions

Step 1Boil the Pasta

Bring a large pot of water to a boil. Add salt and 1/2 teaspoon of oil.

Add the penne pasta and boil for 7–8 minutes until 'al dente' (cooked but still firm).

Drain the water and rinse the pasta under cold running water to stop the cooking process. Set aside.

Step 2Prepare the Vegetables

Heat olive oil or butter in a pan over medium heat.

Add chopped garlic and sauté until fragrant.

Stir in chopped onions and cook until translucent.

Add chopped carrots, capsicum, and boiled corn. Sauté for 2–3 minutes until slightly tender but still crunchy.

Season with salt and black pepper powder. Remove from heat and set aside.

Step 3Make the White Sauce

In a clean pan, melt butter over low-medium heat.

Add the maida (all-purpose flour) and stir continuously for 3–4 minutes until it turns pale and the raw smell disappears.

Gradually pour in the milk, whisking constantly to prevent lumps, until the mixture thickens into a smooth, creamy base.

Stir in salt, black pepper, red chili flakes, and mixed herb seasoning.
