Ingredients

8 cups Broccoli (chopped)

4 tbsp Butter

1 no. Onion (chopped)

3 cloves Garlic (minced)

3 cup Heavy Cream

3 tbsp All-Purpose Flour (Maida)

to taste Salt

to taste Pepper

Instructions

1

Cut the broccoli heads into florets and finely chop the onion. Mince the garlic cloves.

2

In a large pot, melt two tablespoons of butter over medium heat.

3

Add the chopped onion and sauté until softened. Stir in the minced garlic and cook for about one minute until fragrant.

4

Add the broccoli florets to the pot. Stir to combine, ensuring the broccoli is mostly submerged.

5

Bring the mixture to a boil, then reduce the heat, cover, and let it simmer for about 10 minutes until the broccoli is tender.

6

Using an immersion blender, blend the soup directly in the pot until smooth and free of large chunks. (Alternatively, you can transfer it to a standard blender to process until smooth.)

7

In a separate small pot or saucepan, melt the remaining two tablespoons of butter.

8

Whisk in the heavy cream and flour. Cook the mixture briefly while whisking until it begins to thicken.

9

Stir the cream thickener into your broccoli soup base until well combined.

10

Add salt and pepper to taste, stirring well. Serve warm and enjoy your homemade soup.
