1 tsp Dry Mango Powder

3 tbsp Oil

to taste Salt

as needed Water

Instructions

1

In a bowl, mix flour, 2 tsp oil, and half a teaspoon of salt. Gradually add water to knead a soft dough. Cover and let it rest for 15-20 minutes.

2

Heat a pan with 2 tsp oil. Sauté cumin seeds, green chili, and ginger. Add grated carrots, coriander powder, chili powder, mango powder, and salt. Cook for 2-3 minutes until moisture evaporates. Mix in fresh coriander and set aside to cool.

3

Divide the rested dough into equal balls. Flatten one, roll it slightly, and place two spoonfuls of filling in the center.

4

Bring edges together to seal the filling, press down lightly, and dust with dry flour.

5

Gently roll the stuffed ball into a 6-7 inch disc, keeping it slightly thick.

6

Heat a skillet. Place the paratha on it, flipping when the surface darkens. Apply oil/ghee on both sides, cooking until golden brown spots appear on both sides.

7

Serve hot with yogurt, chutney, or your favorite side dish.
