Ingredients

1 medium Banana

2 tbsp Maple Syrup

1 Egg

1 tsp Vanilla Extract

1 1⁄2 cups Milk

2 cups Rolled Oats

1 tsp Cinnamon

1 tsp Baking Powder

1 tsp Salt

1 cup Blueberries

Ground oats or oat flour: 1/4 cup

Instructions

1

Preheat your oven to 350°F (180°C). Grease an 8-inch square baking pan to ensure the oatmeal doesn't stick.

2

In a large mixing bowl, mash the medium banana until smooth. Add the maple syrup (or honey), egg (or flax egg), vanilla extract, and milk. Whisk these together until fully combined.

3

Incorporate the rolled oats, ground oats (oat flour), cinnamon, baking powder, and salt into the wet mixture. Stir until everything is well combined.

4

Transfer the oat mixture into your prepared baking pan. Spread the fresh blueberries evenly over the top; they will sink slightly into the mixture while baking.

5

Place the pan in the oven and bake for 35 to 40 minutes. The dish is ready when the edges appear golden brown and the mixture has pulled away slightly from the sides of the pan.

6

Allow the baked oatmeal to cool and set in the pan for 10 minutes before slicing into portions. Serve warm or cold, optionally with Greek yogurt or peanut butter for extra protein.
