Ingredients

1 cup Broken Wheat

3 cups Water

2 tbsp Clarified Butter (Ghee)

1 sliced Carrot (chopped)

1 cup Green Peas

1 small Bell Pepper (sliced)

2 Tomato (finely chopped)

2 tbsp Coriander Leaves (finely chopped)

1 tsp Cumin Seeds

1 pinch Asafoetida Powder (Hing)

2 Green Chilli (finely chopped)

1 piece Ginger (finely chopped)

1 tsp Salt

Cauliflower: 1/2 cup (finely chopped)

Instructions

1

Heat a small amount of ghee in a pan. Add the broken wheat (dalia) and roast on medium heat, stirring constantly, until it turns light brown and becomes fragrant.

2

Transfer the roasted dalia to a pressure cooker. Add 3 cups of water and cook for one whistle. Once done, let the pressure release naturally before opening the cooker.

3

While the dalia is cooking, finely chop the cauliflower, carrots, bell pepper, tomatoes, green chilies, ginger, and coriander.

4

In a separate pan, heat the remaining ghee. Add cumin seeds and a pinch of asafoetida (hing).

5

Add the green peas, chopped green chilies, and ginger to the pan and sauté for one minute. Add the carrots and cauliflower, continuing to cook for another minute. Finally, stir in the bell pepper and sauté for one more minute.

6

Add the chopped tomatoes, fresh coriander, and salt to the pan. Cook for about two minutes, ensuring the vegetables remain slightly crunchy.

7

Add the cooked dalia to the pan with the vegetables. Mix everything thoroughly until well combined and serve hot.
