Ingredients

Main Ingredients:

1 cup Basmati Rice

2 cup Water

3 cup Grated coconut

1 tbsp Oil

1 tsp Clarified Butter (Ghee)

Tempering & Spices:

1 tsp Black Gram (Urad Dal)

1 tsp Bengal Gram (Chana Dal)

1 tsp Mustard Seeds

1 tsp Cumin Seeds

2 piece Red Chilli

few Curry Leaves

1 tsp Asafoetida Powder (Hing)

2 piece Green Chilli (finely chopped)

1 tsp Ginger (finely chopped)

Additional Ingredients:

1 tbsp Peanuts

1 tbsp Cashew (chopped)

to taste Salt

Instructions

Step 1Prepare the Rice

Wash one cup of long-grain basmati rice thoroughly under water.

Cook the rice with two cups of water and a pinch of salt until fluffy and tender. Once cooked, set it aside.

Step 2Prepare the Tempering (Tadka)

Heat one tablespoon of oil and one teaspoon of ghee in a pan.

Add the mustard seeds, cumin seeds, urad dal, and chana dal. Sauté until the dals turn golden brown.

Add the dried red chilies, fresh curry leaves, and a pinch of asafoetida (hing).

Stir in the finely chopped green chilies and ginger, and sauté for a few seconds.

Step 3Roast Nuts and Add Coconut

Add the peanuts and cashews to the pan and fry until they are lightly golden and crunchy.

Stir in the grated fresh coconut. Cook on medium-low heat for a short time to incorporate the flavors, being careful not to brown the coconut excessively.

Step 4Combine and Serve

Add the cooked rice into the pan with the coconut mixture.

Mix everything gently until the rice is well-coated with the tempering and spices.
