Ingredients

1 tbsp Clarified Butter (Ghee)

1 tbsp Oil

Whole Spices: Cinnamon, Clove, Cardamom, and Bay Leaf

1 large Onion (thinly sliced)

2 nos. Green Chilli (slit)

1 tsp Ginger-Garlic Paste

2 small Potato (cubed)

1 medium Carrot (chopped)

A few Beans

1 cup Green Peas

1 cup Cauliflower Florets

Salt: 1 tsp (or to taste)

1 cup Basmati Rice

Diluted Coconut Milk: 2 cups

Optional garnish: Fried onions and cashew nuts

Instructions

In a pressure cooker, heat the ghee and oil. Add the whole spices (cinnamon, clove, cardamom, and bay leaf) and sauté them briefly.

Add the thinly sliced onion and slit green chillies. Sauté until the onions turn transparent, then stir in the ginger-garlic paste.

Add the cubed potatoes, chopped carrot, chopped beans, fresh green peas, and cauliflower florets. Sauté the mixture for a few minutes.

Add the salt and mix well.

Gently fold in the washed and soaked basmati rice with the vegetables.

Pour in the diluted coconut milk. Check the seasoning, then close the pressure cooker.

Cook on a medium flame for one whistle.
