Ingredients

For the Spice Paste:

1 no. Onion (chopped)

1 no. Green Chilli

1 tsp Garlic Paste

1 tsp Garam masala Powder (Hot Spices)

1 tsp Red Chilli Powder

1 tsp Turmeric Powder

1 tsp Roasted Coriander Seeds(crushed)

to taste Salt

as needed Water

For Cooking:

1 tsp Oil

150 g Cooked Noodles

as needed Water

For garnishing Green Chilli

Step 1Prepare the Spice Paste

In a mortar and pestle or a blender, combine the chopped red onion, green chilli, and crushed garlic.

Add the garam masala, roasted coriander seeds, red chilli powder, turmeric powder, and salt.

Grind the ingredients into a coarse mixture, then add a little water to process it into a smooth, fine paste.

Step 2Cook the Masala Base

Heat a wok over medium flame and add a drop of oil.

Add the prepared spice paste to the wok.

Saute the mixture for about two minutes, or until the raw aroma of the onion, garlic, and spices disappears.

Step 3Boil the Noodles

Pour water into the wok with the cooked masala. You can adjust the amount of water based on how saucy or dry you prefer your noodles.

Once the water begins to boil, add the noodles.

Allow the noodles to cook for three to four minutes until they are soft and pliable, ensuring they are well-enveloped by the masala broth.
