Ingredients

500 g Cauliflower

5 Dry Red Chilli

4 tbsp Lemon Juice

3 tbsp Kashmiri Red Chilli Powder

2 tbsp Mustard Seeds

1 tsp Fenugreek Seeds

1 tsp Turmeric Powder

1 tsp Asafoetida Powder (Hing)

1 cup Mustard Oil

1 tsp Mustard Seeds

8 cloves Garlic

1 stick Curry Leaves

Blanch and Dry the Cauliflower Break the cauliflower into very small florets. Rinse them thoroughly and blanch in boiling water for 1 to 2 minutes. Drain immediately and spread them on a clean kitchen towel. It is essential to let them air-dry completely for at least an hour to remove all moisture; this prevents the pickle from spoiling.

Prepare the Dry Masala In a mixing bowl, combine the dried cauliflower florets with the salt, turmeric powder, and Kashmiri red chili powder. Add the ground mustard seeds and roasted fenugreek powder. Toss everything together so each floret is well-coated in the dry spices

Heat the Mustard Oil In a small pan, heat the mustard oil until it reaches its smoking point. This mellows the raw, pungent bite of the oil. Turn off the heat and let it cool down slightly for a couple of minutes so it remains hot but doesn't burn the spices.

Temper the Spices To the warm oil, add the whole mustard seeds and let them crackle. Add the whole dry red chilies, sliced garlic (if using), and curry leaves. Finally, stir in the asafoetida (hing) to release its savory aroma

Combine and Marinate Carefully pour the hot, tempered oil over the spiced cauliflower florets. Using a clean, dry spoon, mix thoroughly until the oil has turned into a rich, red sauce that coats the vegetables entirely.

Add the Tangy Element Once the mixture has cooled down slightly, stir in the lemon juice or vinegar. This provides the necessary acidity to balance the heat and helps preserve the pickle.

Rest Before Serving While you can eat this immediately, it is highly recommended to let the pickle rest in a glass jar for at least 2 hours (or overnight). This allows the cauliflower to absorb the spices and the oil to develop its full flavor profile.
