Ingredients

50 g Flax seeds (Javas)

1 tbsp Coriander Seeds

1 tbsp Sesame Seeds

2 piece Red Chilli

Dry Tamarind : A piece the size of a gooseberry

to taste Jaggery

to taste Salt

Instructions

Heat a pan (kadai) and add the flaxseeds. Dry roast them on medium heat until they are nicely toasted to enhance the flavor.

Add the coriander seeds to the pan with the flaxseeds. Continue to roast until you start to smell a pleasant aroma.

Add the red chillies and continue to roast. Finally, add the sesame seeds (as they require less cooking time) and the piece of dry tamarind.

Roast everything together until you hear the sesame seeds start to splutter.

Once the mixture is thoroughly toasted, turn off the heat. Let the ingredients sit and cool down completely for about five to six minutes.

Transfer the cooled mixture into a small mixer jar. Pulse it into a coarse powder.

Add the jaggery (for sweetness) and salt to taste. Give the mixture one final pulse in the mixer until well combined.

Your dry chutney powder is ready. Transfer it to an airtight container to maintain its freshness for up to a week.

Serve it as a healthy side with steamed rice, dosa, idli, or chapati.
